Comedy Club Nachos - Laughing Dad Edition.

Comedy Club Classics- Nachos
Prep: 10 min  •  Cook: 12 min  •  Serves: 4

Over my many years on the road telling jokes, I've had plenty of what I call "comedy club suppers" - slamming down food before or after the show, whether it's at a top-notch A-Club or a pizza place on a Thursday night. I've tried it all. So I'm kicking off my favorites with a recipe that I think makes the most authentic comedy-club nachos out there. I'm talking Funny Bone or The Improv-level nachos - all the right ingredients, never soggy, and perfect for a date-night snack or a group of friends to share.

These nachos are built the same way a good set is built -- in layers, with purpose -- with one ingredient doing its absolute best work in exactly the right spot. This isn't gas station nachos. This isn't the sad plate of chips with a side cup of cold cheese sauce.

These are the real thing.

What You Need
  • 8 oz tortilla chips (the thick ones  - this isn't amateur hour)
  • 2 cups shredded Mexican blend cheese
  • 1 can black beans, drained
  • ¼ cup pickled jalapeños
  • ½ cup sour cream
  • 1 cup fresh pico de gallo (store-bought is fine, we don't judge)
  • ½ cup guacamole (or one ripe avocado, mashed with lime and salt)
  • 1 can of pickled banana peppers, drained
  • 3 green onions, sliced
  • ¼ cup fresh cilantro (optional -- we know it's divisive, like crowd work)
  • (Meats are optional. I personally prefer carnitas!)

How to Make It
  1. Set the Stage:
    Preheat your oven to 400°F. Line a large sheet pan with foil. Think of the foil as your stage -- everything that happens here better be worth watching, because cleanup is coming either way.
  2. Lay Down Your Foundation:
    Spread the chips in a single, even layer across the pan. No piling. No stacking. Every chip deserves its moment. This is the one place in comedy where everyone gets equal time. 
  3. First Cheese Layer:
    Scatter half the cheese over the chips. We're doing this in layers like a proper bit; setup first, payoff later. Resist the urge to dump everything at once. This is what makes the soggy. The secret is structural integrity. 
  4. Add the Toppings That Can Handle Heat:
    Distribute the black beans and jalapeños evenly across the cheese layer. The jalapeños go on now because they belong under the cheese - they're the hecklers. You want them contained.
  5. Second Cheese Layer - The Payoff:
    Cover everything with the remaining cheese. This is the callback. The crowd sees it coming, and they love it anyway.
  6. Bake Until Golden:
    Slide the pan into the oven and bake for 10 to 12 minutes, until the cheese is fully melted and the edges of the chips are just starting to brown. You'll smell it. Trust the smell.
  7. Add the Cold Toppings -- Timing Is Everything:
    Pull the pan out and immediately add the sour cream, pico de gallo, guacamole, and banana peppers. Cold toppings go on hot nachos at the last possible second. 
  8. Finish and Serve:
    Top with green onions and cilantro if you're using it. Serve immediately. Nachos are like great topical jokes. In the moment, they're awesome, but they don't improve with age.
